These colourful Smarties Cookies will be a winner for the whole family. Soft and chewy with a tasty crunch, not only do they look great - but they taste even better. Check out our simple recipe below!
Ingredients: 250g of butter, 250g of sugar, 1 large egg, 1 tsp vanilla extract, 350g of plain flour, 1 tsp bicarbonate of soda, 1 tsp baking powder, and 160g of smarties.
Method:
This recipe makes 20 large cookies, and the total time for preparation and cooking is 30 minutes.
1) Begin by preheating your oven to 180°C/160°C fan, and set aside two baking trays for later.
2) In a large mixing bowl, combine your butter and sugar until pale and creamy.
3) Add the egg and vanilla extract into the bowl, and beat the ingredients together until combined.
4) Sift your flour, bicarbonate of soda, and baking powder into another bowl and give them a quick mix.
5) Bit by bit, gently fold the dry ingredients into the other bowl until fully combined and a dry dough is formed.
6) Use your hands to roll out around 20 small balls, and then place them onto the baking tray.
(Tip: Make sure you leave a good amount of distance between each ball, as these will flatten and expand in the oven.)
7) Take your smarties and press a few down into every ball - don't worry if the dough is flattened when you press.
8) Place in the oven and allow the cookies to bake for around 15 minutes, or until you see them turning a golden colour.
9) Remove from the oven and allow to cool.
10) Tuck in, and enjoy your delicious treat!
1) If you can't manage to eat all of your cookies in one go, they can be stored in an airtight container at room temperature for around 3-4 days until they begin going hard. Alternatively, you can freeze them in a ziplock sandwich bag for up to three weeks.
2) Whilst the cookies are soft to bite into, they do contain hard smarties - so we'd recommend that this treat is only eaten by those over two years old.
If you've got mini bakers wanting to help out in the kitchen, we'd suggest that this recipe is best for those four years old and older to follow with parental supervision.
3) If you'd like your smarties hidden within the dough as opposed to just sitting on top, you can mix them in before rolling them out and placing them on the baking tray.
4) If you'd like to create a chocolate version of this recipe, it's really simple! Just add in some cocoa powder with your dry ingredients and follow the rest of the recipe above.
5) As a serving suggestion, we'd recommend eating the cookies whilst still warm with a scoop of vanilla ice cream.
6) Looking for a vegan or dairy-free alternative? Use vegan butter instead of regular butter, and unsweetened apple sauce, plain soy yoghurt, and ground flaxseed all work as a great substitute for an egg. Whilst you can order vegan smarties online, we'd recommend just substituting them out with any vegan chocolates that you'd like.
7) If you found that these cookies are larger than you'd originally wanted, feel free to make smaller balls - you'll just end up with more cookies!
