While at San Diego State University, initially, Pitts worked at a Ralphs supermarket until he encountered Ephraim Salaam. He then went on to join the university football team. He was awarded a scholarship for dominating future NFL quarterback Kabeer Gbaja-Biamila during practice.
He played in nine games as a sophomore, earned a 97% blocking consistency grade, made 60 knockdown blocks, and allowed only one sack. The Houston Texans drafted him in the second round, 50th overall after he started two seasons.
Chester Pitts was then drafted for the 2002 NFL Draft in the second round by Houston Texans, where he would start each game either at the left guard or left tackle and later only played two games during his last season. Pitts ended up injuring his right knee in the previous game of the season, which required him a microfracture surgery.
Before the 2010 NFL season, Pitts was signed as a free agent with Seattle but failed to recover from being able to play in the season opener and then appeared in seven games, among which he started five. It was also the first time he made it to the playoffs.
Pitts signed a contract for one day with Houston on April 27, 2021, and officially retired from the franchise.
During the Super Bowl XLII, an NFL commercial focused on Pitts's career and showed his journey from working at the grocery store to being convinced by Salaam to join the football team at school.
