During his difficult childhood, Eric changed homes twice, once at the age of four when his family relocated to Michigan in the city of St. Johns and again when they shifted to Jasper in Alabama when he was an 11-year-old boy. Sadly, his mother passed away when he was eight years old.

Eric Esch entered the world of professional boxing in the early '90s. His first fight was in the Toughman Contest held in Arkansas, which he won five times. This was the time when he earned the Butterbean nickname as he had to lose weight to fit into the required weight range.
In 1994, he made his professional boxing debut against Tim Daniels, eventually defeating him in the game. His outstanding boxing abilities drew a significant fan base who dubbed him the 'King Of The 4 Rounders.' Butterbean went on to win 51 consecutive fighting fights after his debut and quickly rose through the rankings.
In 1997, he won the IBA Super Heavyweight Championship for the first time. Eric Butterbean competed against well-known boxers such as Billy Zumbrun and Larry Holmes from 2001 to 2003. Despite losing the match against each of them, his performances in both games remain some of his most remembered.
In 2003, Eric Butterbean ventured into kickboxing and was selected by K-1. Initially, he failed to impress his audience and lost numerous games in a row, including the game against Sandy Bowman. However, his losing skid ended in 2005, when Butterbean won a unanimous verdict over Marcus Royster at the K-1 World Grand Prix in Honolulu, Hawaii. 
In addition to boxing and kickboxing, he competed in various wrestling championships held by the World Wrestling Federation. He has defeated champions like Bart Gunn, Cliff Compton, and Trent Acid during his professional wrestling career. Eric Butterbean was also featured in an episode of the reality television show 'Big Law: Deputy Butterbean' in 2011.
Eric Butterbean pursued an MMA career by competing in several MMA events to exhibit his talents as a mixed martial artist. He has participated in several Cage Rage Championships and Pride Fighting Championships.
