He later played for the Oklahoma Sooners in college, where he achieved consensus All-American honors.

At the University of Oklahoma, McCoy served as a team captain twice and started in all 40 games of his college career. His achievements included two forced fumbles, two fumble recoveries, one interception, and four passes defended.

During his tenure with the Tampa Bay Buccaneers (2010-2018), he was chosen as the third overall pick in the 2010 NFL Draft. He played his first NFL game on September 12, 2010, against the Cleveland Browns, where he achieved three tackles and forced a fumble. His first NFL sack was recorded against the San Francisco 49ers on November 21, 2010. McCoy was selected for six consecutive Pro Bowls from 2012 to 2017 while with the Buccaneers.

McCoy joined the Carolina Panthers on June 3, 2019. In the sixth week of the season, facing the Tampa Bay Buccaneers, he sacked his former teammate Jameis Winston 2.5 times, contributing to a 37-26 victory.

McCoy joined the Dallas Cowboys on a three-year deal on March 31, 2020. However, following a quadriceps injury incurred during practice, his contract was terminated by the team on August 18, 2020.

McCoy became a member of the Las Vegas Raiders on August 4, 2021. He incurred a season-ending left knee injury during the season opener against the Baltimore Ravens. He declared his retirement from the NFL on April 14, 2023.
