Chef Huynh has worked in a few of Manhattan's most prestigious kitchens, like Thomas Keller's Per Se and Christian Delourvier's Lespinasse. Guy Savoy, a three-Michelin-star restaurant, opened in Las Vegas in 2006; he worked there as a chef.

Chef Huynh, on the other hand, tried out for Bravo TV's 'Top Chef' television cooking show in 2007. Finally, he won the 'Top Chef' prize after battling against 15 hand-picked cooking professionals from across the world.

Hung has worked at New York City restaurants such as Gilt and Per Se. During the third season of 'Top Chef,' he worked as the executive sous chef in Guy Savoy's restaurant in Las Vegas. Huynh worked as a guest executive chef at Solo restaurant in New York City from 2008 -2009. He has also served as the executive chef at Ajna Bar in New York City, previously named Buddha Bar, from 2009-2011.

In 2011, Huynh became the head chef at Catch in the Meatpacking District of New York City. He parted ways with EMM in February 2015, claiming creative disagreements as to the reason. He opened a new Asian restaurant in 2013 with roughly the same staff.

Huynh became a partner of Asian Concepts at Earl Enterprises, the parent company of Planet Hollywood, in 2018. Huynh was recruited as executive chef at Ava MediterrAegean, a new pan-Mediterranean restaurant in Winter Park, Florida, in July 2021. Huynh joined Orlando-based Omei Restaurant Group as director of culinary innovation in March 2022. Hung is also the cooking director of Hilton resorts World Bimini in North Bimini, Bahamas.
