Denora Valdez Diaz gave birth to José Antonio Diaz in Havana, Cuba. He was raised in North Bergen, New Jersey, after the family migrated to the US. His mother owned a lucrative numbers game operation and a bar. Diaz went to McKinley School and later, to North Bergen High School, where he excelled in the performing arts and received prizes for his performances.

Joey Diaz had a rather difficult early life. His father died when he was three years old and his mother died when he was aged 16. During his adolescent years, he was adopted by four households in North Bergen, but his reckless behavior and propensity for getting into trouble meant he was moved from one house to the next.

He then began appearing in films and a few episodes of television series, such as 'Grudge Match', 'My Name Is Earl', 'The Longest Yard', 'Spider-Man 2', and 'The Many Saints of Newark'. Diaz portrayed a secondary character, Buddha Bonpensiero, a soldier in the Sopranos' crew, in 'The Many Saints of Newark', a prelude to the story of 'The Sopranos' (1999). Diaz could not be part of 'The Sopranos', as one of the lead actors had an objection to his not being Italian.
