The starry sturgeon (Acipenser stellatus) is a species of sturgeon fish in the Acipenser genus. This species of fish is native to eastern Europe and western Asia.

This sturgeon fish is also known as a star sturgeon or a sevruga. Sturgeons can be found in many places however their numbers are declining in a rapid manner due to overfishing.

Star sturgeons are one of the most famous commercially cultivated species for their flesh and caviar. The distribution of this species of sturgeons is now restricted to the  Black, Azov, and Caspian sea basins.

The population of this fish was also found in the Aegean sea basin but is now locally extinct. If no proper management is taken soon, the distribution of starry sturgeons is expected to vanish soon.

The distribution of the stellate sturgeon is found in the range of coastal waters of the seas and in the lowland sections of rivers. The fish is found in the lower parts of water bodies as well as the upper and middle parts.

This is clearly different from other species of sturgeons that are only found in the bottom of the sea and river systems. The star sturgeon migrates up rivers for the purpose of spawning.

In these river and sea water bodies, starry sturgeons feed mainly on crustaceans, small fishes, worms, and mollusks. They have also many big predators native to these parts of the region.

How do they reproduce?

Sexual maturity is reached in males between six to 12 years and in females, maturity is reached between eight to 14 years of age. Adults move to the rivers for spawning. They travel a distance of 43.4-49.7 mi (70-80 km) a day.

Around 15000-30000 eggs are laid by the females. Eggs are deposited on rocks and stones and they hatch after five to seven days. Larvae develop near spawning grounds and move to brackish water thereafter.

Population doubling time is considered to be five to 14 years which is faster than sterlets. However, this population growth is still slower than Siberian sturgeons.

The conservation status of the starry sturgeon (Acipenser stellatus) is categorized as Critically Endangered by the IUCN Red List. It is mainly affected by overfishing, habitat loss due to pollution, and the construction of dams. The species is most sought after for its caviar and flesh.

A starry sturgeon (Acipenser stellatus) has 26-43 lateral scutes, 9-14 ventral scutes, 9-16 dorsal scutes, 40-54 dorsal-fin rays, and 22-35 anal fin rays. Scutes are also known as bony plates. The starry sturgeon looks quite similar to a young diamond sturgeon.

The back is bluish-black in color and sometimes brownish-red. The lateral skin is yellow in color and the ventral side of the fish is bright white in color. Yellowish white and white color is seen on the scutes and plates.

The features distinguishing the stellate sturgeon from the Russian sturgeon are the 30-40 scales on the lateral line.
