Then, during World War II, a recipe appeared in Virginia Safford's 'Food For My Friends' cookbook. This started a cheese ball frenzy, and the popularity of this food lasted well into the 1950s and 1960s.

According to legend, a distracted shepherd left his bread and cheese in a cave outside of the French village of Roquefort. When he returned a few months later, the cheese had gotten infected with Penicillium roqueforti, a cave mold that had given the cheese a bluish color.
