Spread A Smile Cupcakes

Spread some joy to your family members, friends or neighbours by whipping up a batch of the world's happiest cupcakes and getting everyone to tuck in, in collaboration with Spread A Smile UK.

Start out with a simple cupcake mixture below, or jazz things up by choosing one of our seven favourite recipes here.

1.Beat together 110g of caster sugar and 110g of softened butter with a wooden spoon or electric whisk until it's nice and fluffy, then crack 2 eggs into your bowl and whisk these in carefully.

2.Mix in 110g of self-raising flour (plain flour plus a teaspoon of baking powder can work too), 1/2 a teaspoon of vanilla extract and a pinch of salt until everything is just combined.

3.Separate the mixture into 12 cupcake cases and bake them for 12-15 minutes at 180 degrees C until they turn a delicious golden brown.

4.Whilst they're cooking, make buttercream by whisking 300g of icing sugar with 150g of softened butter, adding a drop of food colouring if you like.

5.Once you've removed your cupcakes from the oven and they are completely cool, spread some buttercream onto the top of each one and then decorate them with your biggest smiley face, using chocolate chips, mini silver balls, icing pens or your favourite cake toppings!
